Pancreatitis menu

Pancreatitis is a disease of the pancreas, during which the cells of the organ are destroyed by its own enzymes. In the exacerbation phase, the gland cells are destroyed, in the remission phase, connective tissue is formed in the place of the dead cells. This greatly disrupts the work of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, and therefore treatment should be started with nutrition.

Nutritional recommendations for each patient should be selected individually, depending on the severity of the condition, phase of the disease, food intolerance, concomitant diseases. The menu below for pankteatitis is suitable for the remission phase (that is, for the period when there is no exacerbation), and will help to avoid the next exacerbation.

The basic principles of the menu for pancreatitis:

  1. The purpose of the diet is to improve the work of the pancreas, to reduce the load on the digestive system.
  2. Restriction of simple carbohydrates - sweets, baked goods, sugar. Sugar is partially replaced by xylitol or sorbitol. From sweets allowed - marmalade, honey, jam.
  3. The fractional diet - 5-6 times a day.
  4. Cooking - steamed, baked and boiled. It is necessary to wipe the stringy meat and vegetables rich in dietary fiber (carrots, broccoli, cabbage, fresh herbs).
  5. The temperature of the dishes is normal, cold dishes are excluded.
  6. During the period of remission, the menu can include vegetable and cereal soups in the diet. At the same time, vegetables must be well boiled.
  7. You can use meat, poultry without skin, low-fat varieties of fish, boiled and baked. Do not use offal (liver, kidneys, brains), smoked meats, salted fish, caviar, sausages, canned food.
  8. From dairy products allowed - cottage cheese (up to 20%), milk, sour milk drinks, sour cream in dishes.

  11. Drinks - weak tea, coffee with milk, rosehip broth and fruit drinks diluted in half with water, fruit juices without sugar. Excluded - black coffee, cocoa, carbonated drinks.

Breakfast:sweet pilaf with dried fruits;

Dinner:chicken noodle soup; zucchini and eggplant baked in the oven with cheese;

Afternoon snack:milkshake with strawberries and banana;

Nutritionist's comment:

To make sweet pilaf suitable for a patient with pancreatitis, exclude nuts, cranberries from it and reduce the amount of sugar to 1 tablespoon.

We add vegetables to the soup without frying, this will reduce the load on the pancreas.

Hot spices should be excluded from recipes.

I recommend choosing milk for a cocktail with a fat content of no more than 2. 5%, and as for coffee, it is better to exclude it from the recipe, it is not advisable to use this product with pancreatitis.

You can use any of the methods for preparing halibut fillets, both are acceptable in case of illness. You can choose a side dish with grain, for example, boiled buckwheat, or vegetable - cauliflower, broccoli, potatoes, zucchini, etc. Choose a method of cooking vegetables that does not overshadow the taste of the fish or provoke aggravations, for example, boil or steam the vegetables.
